Add 2 additional cups of flour, one at a time, scraping down the sides and mixing after each addition. Combine using your whisk or paddle attachment on your mixture. In a stand mixer bowl add the yeast mixture, milk mixture, 1/4 cup sugar, salt and 1 cup flour. Add the yeast to warm water and 1 teaspoon of sugar. Add 2 tablespoons of softened butter and let cool to 120 degrees Fahrenheit. I recommend doing this over the stove so you can keep a close eye on the temperature.
